What is a bone-in ribeye
The bone-in ribeye is a bone-in cut of beef, thick and with marbled fat, made for cooking over high heat and serving in pieces to share. The fat and the bone give it lots of flavour.
How much to buy
As a guide, between 400 and 500 grams with the bone per person. A one-kilo ribeye feeds two people with a normal appetite.
How to cook it on the grill
- Take it out of the fridge 30 to 40 minutes before cooking.
- Dry it with kitchen paper and season with coarse salt just before putting it on.
- With a very hot grill, sear it for 3 to 4 minutes per side depending on thickness.
- If it is very thick, move it to an indirect-heat zone until it reaches the doneness you want.
- Let it rest for 5 minutes, slice it against the grain and finish with flaky salt.
